Talking Cedar

Restaurant | distillery | brewery

“Heritage Distilling Co. at Talking Cedar is an historic enterprise – it is the first tribally-owned distillery in the U.S. and the first distillery allowed in Indian country since 1834, thanks to the repeal of an Andrew Jackson-era statute that prohibited such operations on Tribal lands.

The Chehalis Tribe and Heritage Distilling Company joined forces to successfully lobby Congress in 2018 to repeal the ban on distilleries in Indian country.”

Talking Cedar was designed to co-locate a distillery and brewery in the same facility to optimize the benefits of sharing operational infrastructure. The building includes a restaurant, tasting and taprooms, outdoor beverage garden and private event spaces, to provide an immersive customer experience. Year-round use of the outdoor garden is possible by repurposing hot water captured from the production process.

Outdoor beverage garden heated by in-slab hydronic heating, distillery, and brewery production processes on display from the adjacent level and overlooking operations, upper-level classrooms support private events.
